Homemade Granola Bars!

written by Kate H.

When you are rushing around amidst school, extra-curriculars, and family time, it is hard to find snacks that are both healthy and easy to grab. A super easy, quick snack is a granola bar. However, most brands these days have many added preservatives, sugars, and artificial flavors that are not good for our bodies. I found a super easy recipe for homemade granola bars packed with protein and great flavor! You can make these ahead of time and store them in your fridge for you extra-busy days when you need a snack.

Yields: about 10 small bars

Ingredients:

2 cups Oats

1/2 cup Milk (I used skim)

1/2 cup Protein Powder (I used vanilla)

1/4 cup Honey

1 tsp Cinnamon

1/4 cup Almond butter

1/4 tsp Salt

1 tsp Vanilla

Chocolate chunks (amount to your liking)

Craisins (or any other dried fruit) (amount to your liking)

(You can add any other nuts or sweets that you would like into your bars!)

Directions:

1) Preheat your oven to 350 degrees Fahrenheit and grease a 9×9 pan.

2) Mix together the oats, protein powder, salt and cinnamon until combined.

3) In a separate bowl, mix together the milk, vanilla, and almond butter.

4) Combine the wet and dry ingredients.

5) Add in the craisins and chocolate chips (or any other extras).

6) Press firmly into the pan.

7) Bake for about 20 minutes.

8) Let cool, cut, and enjoy! These keep best in the refrigerator.
