I have a total sweet tooth from the moment I wake up to the moment I go to sleep. So to get my sweet fix in the morning, I have these blueberry muffins. They taste great and just so happen to be healthy too! Have them alongside a bowl of cereal, eggs, or your favorite breakfast food as a delicious and healthy treat to top off your meal.

Yields: about 9 large muffins

Time: 35 minutes

1/2 tsp vanilla extract

Pinch of salt

Sliced nuts (optional)

Directions:

  1. Preheat oven to 390 degrees F, line a muffin try with papers, and spray with a little cooking spray to keep the muffins from sticking to the papers.
