Friday Fun: Blueberry Muffins Recipe!

I have a total sweet tooth from the moment I wake up to the moment I go to sleep. So to get my sweet fix in the morning, I have these blueberry muffins. They taste great and just so happen to be healthy too! Have them alongside a bowl of cereal, eggs, or your favorite breakfast food as a delicious and healthy treat to top off your meal.
Yields: about 9 large muffins
Time: 35 minutes
Recipe:
1 ripe banana
1 egg
3/4 cup Rolled Oats
1/2 cup greek yogurt
1 1/2 tbsp honey
1/4 tsp baking soda
1 tsp baking powder
1 cup blueberries (varies depending on how many you like)
1/2 tsp vanilla extract
Pinch of salt
Sliced nuts (optional)
Directions:
- Preheat oven to 390 degrees F, line a muffin try with papers, and spray with a little cooking spray to keep the muffins from sticking to the papers.
2. Combine all ingredients except for the blueberries, nuts, and 1/4 cup of oats.
3. Blend until smooth.
4. Stir in blueberries and the remaining oats, leaving a few blueberries for the top.
5. Fill muffin tins almost to the top.
6. Top with remaining blueberries and your choice of nuts.
7. Bake for 20 minutes or until golden brown.
